BROWN RICE BANANA, BLUEBERRY and COCONUT PANCAKES (gluten free)

One of my favorite ways to start the day.  A stack of cakes,  gluten often leaves a heavier feeling and is often void of nutrients due to over processing.  These cakes will leave you feeling light and energized.

INGREDIENTS

1 cup brown rice flour

1/2 cup of almond flax or rice milk

1 teaspoon baking soda (aluminum free)

1 egg

1 teaspoon of pink Himalayan salt

1 table spoon of chia seeds

Grade A Maple Syrup (dark amber)

Pecans

Bananas

Blueberries

Coconut oil

Cinnamon

PREPARATION

I like to use a blender when making pancakes to ensure adequate mixing but a bowl and whisk will suffice.  Toss the brown rice flour, milk, egg, baking soda,  sea salt,  chia seeds and a table spoon of coconut oil into a blender or bowl and mix thoroughly.    The secret to a good pancake is to make sure the pan is hot before you pour the batter.  This is why the 2nd and 3rd are typically better.  Heat the pan on med heat with a table spoon of coconut oil for 2 – 3 minutes.  Before pouring the batter prep the other ingredients.  take a handful of pecans and squeeze into a bowl to create small pieces or buy already broken up, they should break up very easily. Chop a banana into desired sizes I usually slice in little half pieces.  Also toss some frozen blueberries into a small bowl with a spoon.  Once the pecans blueberries and bananas are prepped. Poor the batter into the pan.  Once the batter is set sprinkled the desired amount blueberries bananas and pecans into the batter. Flip when ready, shoot for that golden brown perfection.  Once the cake is cooked prepare for the finishing touches.  These are essential so don’t skip!  Spread coconut oil over the top sprinkle with cinnamon and Himalayan salt.  Trust me on the salt everyone is surprised but blown away after the first bite.  Sweet and salty go hand and hand.  Last but not least drizzle fine dark amber syrup over the top.   Make sure to purchase quality syrup!  Syrup is the most important ingredient!!!

Brown Rice Flour 

Brown rice flour uses the entire rice grain, including the bran. This gives the flour a darker color, and gives brown rice flour a higher mineral content than white rice flour.  Because brown rice is not milled, it manages to hang on to all of its bran and germ content. Brown rice flour is rich in niacin or vitamin B3, vitamin B6, magnesium, phosphorus, iron, zinc and manganese. Brown Rice flour is also gluten free which means it is easier on your stomach.
